Bro Roq Soup aka Broccoli and Roquefort Soup is one of my favorite soups. It’s easy to make and it does not have a lot of ingredients. And still the Broccoli and Roquefort Soup has a smooth and full-bodied taste. The best thing about Bro Roq Soup is that it freezes well and the taste actually intensifies after you defrost it. Such an easy and tasty lunch or dinner to make in less than 30 minutes.
Bro Roq Soup (Broccoli and Roquefort Soup)
Preparation time: 30 minutes
Makes: 3 – 4 cups of ready soup
2 Broccoli Crowns (each 335 g)
150 g Philadelphia Cream Cheese
100 g Roquefort Blue Cheese
1 cup milk
Cut the broccoli crowns into florets and disregard the stalks.
In a medium pan heat up water to boiling point. Add the broccoli florets. Boil for 10-15 minutes or until the florets are tender. Drain.
In a blender mix the tender broccoli, cream cheese, Roquefort and milk. Blend until smooth.
Transfer the soup back into the pan and heat until hot.
